Midnight Feast


I’m having a mid-winter, midnight feast because I found a way to capture summer in a bottle.

I got a bumper crop this year which yielded over 100 pieces of fruit from my 2 trees. So what’s one to do? Lemon butter. So I spent a quick hour preparing some of this years lemon crop to make some lemon butter. I just wanted to do a test batch before I try processing all the fruit.

2010JUL082319 The ingredients:

  • 3 lemons
  • 2 eggs
  • 60g butter
  • 2 x tsp corn flour
  • 1 x cup sugar
  • 6 x sugar cubes
2010JUL082313 The recipe went something like this:

  • peel lemons of rind & add sugar cubes and water to pot & gently boil
  • reduce peel mixture
  • sieve juice of lemons
  • Add juice of lemons to creamed butter (sugar + butter) add to pot & gently boil
  • stir butter mixture & bring to slow boil
  • add eggs & mix in bowl placed in a pot of boiling water
  • add lemon butter juice to egg mixture & simmer for 10 minutes while stirring

The only real modification I made was to add the grated peel to the lemon mixture. This is an intentional addition to cut the sweetness and add some slight texture and yielded about 2/3 of a jar. I’ll adjust the recipe to 4 lemons to fill a jar. Not a bad result for an hours work.
